      I'm spending another lazy weekend in Negril recharging my batteries.  We have plans to all gather for our Sunday rice and peas dinner with family this evening, but since I had the morning  free, I decided to spend it cleaning out my closet.   It is so difficult deciding which items will make another appearance next summer and which ones will not.

Happy Sunday everyone hope you are all enjoying a wonderful
weekend.  My weekend has been quite the busy one which I why I am so happy that 
today there are absolutely no pending appointments.  The only thing I have on my schedule is a hot date with 
my computer and remote control.  I have made some delicious empanadas to snack on, (I will post the recipe), while I sit back and enjoy one of my favorite pastimes; reviewing all the season's swim fashions. 
It's great because I get to revisit all the fabulous swim wear designs and decide which ones I definately want
to add to my ever growing collection and most importantly, how much more work I need to invest to make sure this body is bikini ready. Here is one of my favorites this season, Victoria Secret Swim 2013 Collection:

When you are fortunate enough to live in paradise throught the year it can at times become easy to take it for granted.  I am not referring top all the material aspects of living in haute paradise, but the core, fundamental reasons we found a paradisaical existance so appealing; seemingly endless sunshine, powder-soft sand that serve as a pathway to water that can only be decribed as azure-marine-qouise (compound of azure, aquamarine and turqouise), all products of Mother Nature's boundless imagination.  Just reading back my words causes me to question how can we ever forget these beautiful basics to a partadisical lifestyle, yet sadly enough, it does happen.

That propensity toward forgetfulness is always the reason I am always mindful of anything that brings me back to the truely magnificent realities of paradise. It is in those instances where I become appreciative of those subtle reminders of those things we can take for granted.  I recently came across a blogger who with just one picture reminded me of the simple pleasures of a sunny day when the chronicled her visit to Florida for a friend's wedding on her blog.  I visit www.fashion for desert quite often for the beauty and style tips she offers but it was this picture that resonated with me as a reminder of those things that are essentially important.  Check it out.

Top 5 things to do while visiting Miami


So my time in Miami has come to a close.  I thought a great way to end the week long  is to spend my morning and afternoon doing what many do on a balmy Sunday, go for a drive.  I promise I was so not one of those people idly gazing out of my window pointing and holding up traffic.  But I did take the time to take drive over to certain places of interest I have always wanted to visit in Miami besides the usual trek to South Beach.  If you are in town be sure to check them out.  Here’s my list:

1.  No visit to Miami is complete without a stop at the historical 50-acre Vizcaya estate. This European-style mansion offers a glimpse at life in turn-of-the-century South Florida. It's also an extremely popular venue for galas, weddings and other entertainment events.

2.  Be sure to drive by he opulent Versace Mansion, Casa Casuarina, located at 1116 Ocean Drive, to see where Italian fashion designer Gianni Versace once hosted lavish galas for glamorous guests like Madonna, Elton John, and Princess Diana.

3.   Visit Little Havana center of  Hispanic culture, where Cubans pay homage to their heritage along Memorial Boulevard, located on 13th Avenue off Calle Ocho.  See the monuments like the eternal flame at the Brigade 2506 Memorial remembering the heroes of the Bay of Pigs; also the Calle Ocho Walk of Fame, the Hispanic equivalent of Hollywood's sidewalk of fame. Little Havana's historic Tower Theater, located at S.W. 8th Street and 15th Avenue, teams with Miami-Dade College to present some free Cuban and Latin American films (in Spanish). Performances and programs are presented almost daily.

4.   Roar back to the 1920's on Art Deco Ocean Drive.  Architecture lovers can Follow 5th Street north to Dade Boulevard, and Alton Road east to the Atlantic Ocean, an area with more than 800 buildings designed in the pre-war modernism of the 1930s  amidst the Art Deco District.
The Miami Beach Architectural Historic District is only one-mile radius on South Beach.

5.  Take a trip to Miami MetroZoo, largest and oldest zoological garden in Florida. It houses over 1,200 wild animals and is a free range zoo. Its climate allows it to keep a wide variety of animals from Asia, Australia and Africa like no other zoo in the country.

COOKING IN PARADISE


Sunday Cod Fish Cakes
  

As a Child of Paradise myself I can officially attest that for many inhabitants of paradise the weekend is not just a few days for rest or revelry but are actually marked and defined by culture and customs that at times identify  those days even more so than their official calendar names. For many, outside of language and costume, nothing speaks to culture more so than the food they eat and their preparation habits which means for me,  Sundays is a morning where you get up and make a fresh batch of Cod Fish Cakes for brunch.   After another late Saturday evening Reggae session, I was craving this so much I got up at 8:00 am Saturday morning just to make sure I would get fresh Cod from my local market.  I did not want to keep this delicious recipe to myself so here is the recipe so that you can also have a taste of paradise.  Enjoy!






1 lb. boneless cod fish
1 tsp. parsley flakes
1 onion, chopped fine
1 sm. green sweet pepper, chopped fine
1 tsp. hot pepper
1 tbsp. sugar
1 tbsp. baking powder
1/2 lb. flour
1 egg, beaten
Milk
Corn or vegetable oil for frying
Soak cod fish overnight or boil 25 minutes to take out most of the salt. Pour water off, then rinse in cold water. Squeeze water out, then juggle fish by hand removing any hidden bones. Add flour, baking powder, sugar and other ingredients. Pour in milk to form a batter. Drop by the teaspoonful in hot frying pan with oil. Remove from pan when both sides are golden brown. Serve while hot.
