One of the best things about living in Paradise is without question, the food. The innumerable exotic varieties of fruits, vegetables, herbs and spices makes a visit to paradise not just a sunny retreat, but a culinary dream. My childhood spent both on the beaches of Jamaica and the golden shores of New Jersey has exposed me to some of the finest cuisine a taste bud can be so lucky to sample. To put it mildly, we know good food! The second best thing to eating good food is sharing it and so, not being one to keep a good thing to ourselves, we want to share with you some of the best of the best paradise, beach inspired recipes.
A really great friend to the Haute Paradise staff and an OUTSTANDING chef, Keman Bell, kindly decided to share one of our favorite 'Jersey Summer Salad' that we have gone absolutely mad for. It's easy with low preparation time and delicious as well as nutritious dish to serve at a summer gathering. It was gone in 30 seconds at Dodie's Tech Tea-Party last week!
PINEAPPLE CUCUMBER SALAD


INGREDIENTS:
½ CUP SESAME OIL
1 CUP RICE VINEGAR
¼ CUP HONEY
¼ CUP SOY SAUCE
2 TABLESPOONS SESAME SEEDS
1 HALF OF A FRESH PINEAPPLE,MEDIUM DICE
4 CARROTS PEELED AND SHREDDED
5 CUCUMBERS ,MEDIUM DICE
1 RED ONION, LONG SLICE
METHOD
(MIX VINEGAR,SOY, AND HONEY TOGETHER THEN WHISK IN THE OIL SLOWLY
TO FORM DRESSING)
POUR OVER VEGETABLES MIX TOGETHER THEN SPRINKLE SESAME SEED OVER
THE TOP.
